The brilliantly scarlet Campari liqueur is one of the most famous bitter liqueurs in the world. It is the quintessential astringent (that is, the opposite of sweet) liqueur. It was first made in 1860 by Gaspare Campari, where his liqueur Bitter Ulo Olanda became popular as an aperitif. Over the decades it has enjoyed constant popularity both on its own and a key ingredient in many different cocktails.
