Hacienda de los Diaz tequila is “distilled in he old way, unhurried and slow.” They call themselves the “rooster of tequilas,” which they go on to say means “a tempered rooster ready to fight to the end.” They describe their tequila as not mild and tempestuous. The agave is baked in a clay furnace and crushed with a stone wheel. They’re also very proud of the natural air bubbles in the bottle, which make each one unique. The name comes from the founder Humberto Diaz who first began producing the tequila in 1910.
Hacienda de los Diaz Reposado is their rested or “reposado” tequila, which means it will have aged briefly in oak for between 2 and 11 months prior to bottling. This gives the normally clear tequila a light color and oak flavor.
