In 1934, the ebullient Victor Bergeron built a cozy saloon in Oakland, California naming it Hinky Dink’s after the well-known World War I song “Hinky Dinky Parlay Vous.” After returning from his travels to Cuba and Hawaii, in 1937 Vic “The Trader” transformed Hinky Dink’s from a saloon into Trader Vic’s, a tropical retreat bedecked with various artifacts and trappings, serving simmering plates of Island-style cuisine and becoming America’s first fusion restaurant concept.
